Andrew Mettert, executive chef at University of Dubuque, has slowly but surely included locally produced foods in his kitchen — many from WW Homestead Dairy, of Waukon, Iowa.
“It’s a good opportunity to support local farms,” Mettert said. “We can move some volume for them where I would be able to purchase more quantities than the average individual or average small restaurant. It helps give them solid stable support.”
